David Trims Brisket

Famous Dave's ended this year's CBS Backyard BBQ with a School Supply Drive to benefit the Wissonoming Police Athletic League.  Famous fans brought their unused school supplies to their local Famous Dave's, and Wilbur made the donation live on CBS 3's last Backyard BBQ.  Students and volunteers collected their supplies while eating Famous chopped pork sandwiches and roasted chicken.  Special thanks to all our Famous Fans whose donations made this event possible.  This is what being FAMOUS is all about!

 

We are very excited to announce that Wilbur's Revenge won First place in Iron Chef at the NJ State BBQ Championship!  After the "secret ingredient" was announced at the Chef's meeting on Friday, we brainstormed and came up with a plan for a sausage, shrimp and crab dish.  Saturday morning found us rushing around trying to locate crab to complete our masterpiece.  We finally found some LIVE crab and got to work, but as we prepared to saute the crab, we realized that sauteing was prohibited in the rules!  With an hour left before turn-in, David decided to completely change course and instead smoke a fatty.  We weaved bacon into a mat and then spread the sausage on top of the bacon.  We layered shrimp, onion and green, red and orange bell peppers on top of the sausage and rolled the whole thing up, threw it in the smoke and spent the next hour anxiously checking our watches waiting to see if our entry would be done in time.  We pulled the fatty at the last possible second and Voila!  It was perfect.  We sliced it up and ran the box to the judges. We didn't even get to taste our dish until after it was turned in, and although we all thought it had excellent flavor, we weren't sure it was a winning dish.  As the winners for Iron Chef were announced, we were SHOCKED when we were called up to the stage as First Place winners!  We received a beautiful trophy with BBQ tools inside as well as our FIRST check!
