Rolling Fork Farm: Raised & Grazed on Fresh Pasture
Welcome to Rolling Fork Farm, family owned and operated in Floyd, Virginia. Agatha & David Grimsley, together with the help of their toddler, Otis, and Agatha’s father, Alan, raise grass-fed livestock for meat, dairy & eggs, plus shiitake mushrooms, herbal teas, and veggies. No pesticides or herbicides are used on our fields. The cows & hogs are never fed commercial feeds, and all animals are free of added hormones & antibiotics. This sustainable farming approach is healthier for the animals, healthier for the environment, and produces healthier, tastier food far superior to conventional products.

Farm Fresh Eggs
Our Fresh Brown Eggs are from hens raised on pasture. We rotate the coop & fence every few days to ensure a healthy diet of green grass and insects. This gives our yolks that deep orange color & good structure, and making them rich in Omega-3 Fatty Acids. The chickens in turn fertilize our hay fields and clean up the pastures.
Whey-Fed Pork
Our Tamworth Hogs enjoy a varied diet of grass, veggies (left-overs collected from 2 health-food stores), nuts, fresh fruit, and whey from our home cheese-making, in addition to their feed. Each season, we fence a new paddock of pasture and woods, allowing them to forage for roots and nuts.
Feeding whey to hogs is nothing new -- in fact the Italians have been feeding it to their herds for years in order to produce what is widely considered the best Prosciuttos in the world. We believe this addition to their diet gives our pork a rich and tender flavor.
Grass-Fed Beef
Our beefers are raised on our farm, grazing with their mothers until weaning at 7 months, then rotated on high-quality pasture for finishing. The steers are never fed grain, and they are free of added hormones and antibiotics. Our “salad-bar beef” is higher in Omega-3 and CLA fatty acids than commercial stock-yard beef. No pesticides or herbicides are used on our pastures. This sustainable farming approach is healthier for the animals, healthier for the environment, and produces a healthier and tastier product.
Pasture-Raised Veal
Our Rosé Veal is nothing like conventional veal. Our calves are born & raised on the farm, fed mothers’ milk, and are free to graze with the herd on fresh green pasture. We raise our calves 6 to 8 months, producing a more mature, full-flavored Rose Veal. We sell our veal by the cut at the Blacksburg Farmers Market, or in bulk. Please email us for a bulk order form.
